newbie drummer needs interface coaching

Hi, I am helping a friend complete some demos, and I'm pretty new to home recording, at least on a computer. I plan to record acoustic drum tracks using an 8 mic setup running through either a Beringer or Peavey board, and going into Cakewalk Sonar 6 on my laptop's firewire. I want to use Sonar because the demos have alrady been started in that format.

I havent bought Sonar or a firewire interface yet, and I'm full of questions on setup, wiring, hardware, etc...
For starters-
1) How are the mics hooked up to the interface? Most I have looked at have six or less in's and none have XLR inputs.
2) If I run the mics through my mixer, how do I go from the mixer to interface and keep the mics on individual tracks?
3) what would be the best interfaces to look at given that I'm recording a fairly large kit with several mics?

Any pointers are welcome.
