If I purchase a midi sequencer to record tracks from my keyboard/sysnthesizer, can I use the midi sequencer/ track recorder to record my acoustic guitar?

Or in other words, do most midi devices have a mic capabilities to record from an external non-digital instrument i.e. aocustic guitar?

No. Midi does not in any way involve or handle sound.
