There's a fantastic book, MIDI for the Professional, which I bought for a college class and still use as a reference. You can probably get a used copy for a few dollars.
Understanding MIDI has been tremendously helpful to me over the years. Mainly because I use some quirky MIDI devices and hardware, and there's not a piece of software like OMS Galaxy anymore.
