midi channel settings

Hello fellow sonar 3 users,

Can anyone tell me how to set the midi channel so you can record and hear it WITHOUT using OMNI? I'm stuck. We are stuck using OMNI, so then every subsequent track we record with a different sound changes the sound on the 1st track.
How do you set the track IN/OUT channels up so that OMNI is no longer necessary and you can record multiple MIDI tracks with different sounds?

It's better to post with more info about your setup. What controler you use to input, and what synth to playback? External, soundfonts, DXi? One more thing unclear is, do you attempt to record several different tracks at once, or one track @ a time?
