I need a mic for recording both vocals and acoustic guitar (and occasionally an acoustic mandolin) and have been looking at the Shure SM57.
I noticed that it is rated at 150 Ohms, whereas the mic input on the BR is rated @ 2K Ohms. Is this going to make a difference - volume, hum, etc?

I like the reviews of the Shure mic and the fact that I can pick one up used fairly cheap.

You do not need an impedance matching transformer (the one you linked wouldn't work well anyway, it is intended to match a much higher input impedance, more like 25-50K or more). The usual approach is to bridge impedances, not match them. The input impedance of a preamp should be around 8-10 times higher than the source impedance of the mic. That prevents loading of the microphone. It generally isn't a problem if the impedance is even higher than that, as long as it doesn't get ridiculously high.

So . . . just plug in the mic and go.

Edit: looking at the BR600 specs, it seems to have 1/4" TRS jacks. So what you will want is an XLR-1/4" TRS cable (that's tip-ring-sleeve, as opposed to tip-sleeve as on the Little IMP) that is NOT an impedance matching transformer. Just a regular ol' cable. Female XLR on the mic side, 1/4" TRS to the recorder.
