When I "master" my recording, does it come between the console and the DAT? Or between the DAT and the CD master copy? Also recomended Mastering device? DBX quantum,TC Elec. finalizer? Whats everyones thought! Thanks Jim

Usually mastering is done by a mastering studio, after the DAT tape, but before making the CD master.

If you are actually pressing CD's I'd recommend you to use a professional mastering studio instead of trying to do it yourself. It'll be cheaper and you'll get better results than buying a pro mastering device.
If you are making demos, you can use a mastering device to make things sound better if you like, but it's optional. :) And it's bloody hard, too, which you notice by the amount of threads here for this task. I totally failed, each time I try! It always end up sounding better before my "mastering"! :p
There have been several references to different mastering articles on the web here on the BBS. Checkthem out, and you might be doing better than me... :)
Good luck whatever you choose!

What does this have to do with microphones?
There is another forum for Mixing/Mastering.
