Live recording and mixing:Acoustic performance

I'm recording and filming my band this weekend in acoustic session, doing around 5-6 tracks filmed for youtube/myspace promotion type stuff.

I want to get a very usable audio recording to mix with the video and possibly use for other purposes down the track.

I have two major limitations being recording method and mics. The only method I have to record the session is stereo into Cubase so no multi tracking at all hence any post prod will be eq/reverb/compression etc on the whole mix.

To record it I am using a 8 channel mixer run running direct into PC.

I'm not too well versed in micing and have set up the room tonight in anticipation of the session. Here is what I currently have (band is arranged approximately like this: https://www.youtube.com/watch?v=_Zj55gaAgM4):

Rode NT3 - upright piano over open top
Rode NT3 - Room mic centred in front of band
Rode NT5 - Drum overhead primarily over ride
Rode NT5 - Close micing snare (with pop filter)
Shure 12A - Close micing acoustic guitar
Shure SM48 - Male vocal
Audiodyna Neodynamium (basically a crap SM57) - Close micing bass drum

Bass guitar run direct into mixer but potential for a miced acoustic bass.

I also have access to two dynamic AKG vocal mics, something like a D3800 from what I recognise on their site. I have access to NO other mics.

I can only use a maximum of 8 channels.

Within these various constraints what is the best combination for the following performance arrangements:

Upright Piano and vocal ONLY.
Upright Piano, vocal, guitar, drums, bass (as in Sigur ros vid but with vocal at piano)
Vocal, 2x acoustic guitar, bass, drums.

We may do some other variations of instrument use but I'm sure the above will give a clear picture.

The other thing I need a little help with is general mixer settings if at all possible to guide, ie relative levels of snare vs bass vs vox vs guitar etc. Any particular inclinations towards eq I should be aware of etc etc!

Anyway I realise this is pretty loaded and I will be hitting google for a lot of guidance but any firsthand advice based the above would be very very much appreciated. The results will definently be posted here!
