large vs small diaphragm condenser question

Could someone explain the difference in sound these different sized capsules will produce on acoustic guitars and vocals?

My understanding is that the smaller capsules are better equipped to handle the hf transients and conversely the larger capsules capture more of the lower midrange and low end frequencies.

Also, how do the various polar patterns(cardiod, omni, hyper cardiod, etc.) come into play

A more detailed explanation would be greatly appreciated as well as any recommendations/examples as well.

If it sounds good do it, but size is inversely proportionant to accuracy. it seems.

also the smaller the capsule the better the ability to pick up the fast moving overtones.

The larger ones have a more full sound that works great for vocals.

Never trust a fast moving overtone, I always say...
