Just converting to computer recording, help please!

I have been using a Roland BR1600 to record with now for a while, though it is all inclusive I need much better quality since I intend on selling my music. I have been talking to a sales person who has told me that to get me where I want to be is a Apogee Symphony, lunch box, and Pro Tools. I have no idea which is why I am posting the question here. I will be recording a live drum kit while tracking a bass, so I figure 8 inputs minimum. My music is soul, blues, funk kind of stuff. I would very much appreciate any and all insight. The fact that you have been recording using a BR1600 means you have some basic recording knowledge - that's a good thing!
What's your budget?
Are you going to do all the work yourself (tracking, mixing, mastering)? or bringing the files to a pro studio to master?
You can get a good 8-preamped input audio interface like a Tascam US-1800 for $300 (compared to hte APogee @ $1600), use Reaper as your DAW (download for free, $60 to register). The Apogee is a 32 channel converter - I assume the 'lunchbox' the guy was referring to is a converter box to send everything to the Apogee.

Have you tried USBing your individual track sound files from the BR1600 to your computer to do mixing/processing in your computer? That would be a good first step.
