Individual tracks or submixes rendered as full length audio files.
For mixing practice you would use individual track stems that somebody else recorded.
If you're mixing a project that will get mastered it's somewhat common to produce a stereo instrumental stem and a stereo vocal stem and let the mastering engineer do the final processing on them seperately before combining them to one stereo file.

stems vs multitracks.
Stems is prepared tracks, etc all the drums in one track and all the synths in another and then vocals on the last track.
Multitracks is where you get all tracks seperated etc. Kicks in one track - snare in one track, hihat in one track and so on
