I can't adjust the mic volume in my monitors while recording. What is the simplest thing I can do to be able to adjust the monitoring level of the mic from the software level while recording.

I've got a AKG C-3000 connected to a behringer 802a mixer. This is connected to my Audiophile 2496 and I'm monitoring through my computer speakers/headphones. I'm recording with Cakewalk Home Studio 2004. I can easily adjust all my track levels, once recorded, within the software.

If I need another piece(s) of hardware, what're some options?

You should be able to have the Audiophiles line input monitored at any volume you like independant of the record level.
Open the Delta panel from the taskbar M icon, and in the patchbay tab, set h/w out 1/2 to the monitor mixer (assuming your monitors are fed from the cards analog rca outputs).
In the panels mixer, check and adjust your monitoring levels to suit.
Note that you cannot boost with this mixer, if the live input from the mic isn't loud enough compared to the existing tracks, turn down the output 1/2 down in the delta mixer.
Just wondering though, where are your headphones plugged in? If they're in the mixer, the above tactic won't help without a little more complication.

What is the panels mixer that you're talking about?

My headphones are plugged into the computer speakers which are coming out of the soundcard analog outs.

Actually the mic is too loud. I'm trying to turn it up enough to get a good signal but I can't turn the mic down in the software.

The Delta control panel has a monitor mixer tab - you should be able to launch it from the 'M' icon at the right hand side of the Windows taskbar.
Unless you have very old M-audio Delta drivers when the panel was in Windows Control Panel.
