How do you get vocals to sit in the middle of the mix ?

Funny thing... I do that and all my mix it sounds like the vocals are too present... Should de-pan some instruments?

So the way to deal with it is to stomp on and smash up the mixing desk not go and talk to the sound guy? Gee that's going to get his mic turned back on.....NOT!
 
One issue probably that your studio/nearfield monitor are not properly configured or you are not listening in the "sweet spot" ruining the stereo image. Since you panned it already in the center, you should take a look at re-calibrating your studio monitors by running some standard audio test tones. This will ensure that your monitors are giving you correct stereo image.

Other issue could be that the original recording already contains some stereo information (panned already during actual recording) and that it not recorded in mono. You need to confirm this.
 
Get get vocals mono pan them to the center.

If they don't sound mono, you probably have too much other stuff on one side, so it seems like the vocals are leaning. Balance your instruments stereo field and it should be good.

The other option is your speakers. Listen to something you know well and see if everything seems balanced, if not adjust your speakers.
