Its not a great Idea mixing with headphones, it gives you a wrong impression of the sound.
Especially a set of hifi headphones like "Koss, sony and sutch" wich makes your ipod rawk.
You`d be better of with a pair of monitors.

If you havent got any and cant afford them, try using the stereo, and perhaps combine them with the headset, you might get a decent result.

again good result, needs neutral good sounding monitors.

as for teaching you mastering, do a search...
Its not done with a swithc of a button or something, its an entire trade. :)

I find headphones handy to check the placement (panning) of the different parts of the recording. so as naky taky tira suggested a mixture of both could prove to be the best route to go

ALSO run your favourite CD along side your recordings in order to judge bottom & top end
 
I guess the answer to this is "it's impossible to master mixing with headphones".
