so i was wondering, when i take levels, should have the dial on my interface for gain up more then the gain in cubase for the track?

everyone will have different ways of dealing with this.
This is what I do:
1 leave program recording levels on the default
2 open interface levels to the maximum
3 control the overall recording level from your desk.

Leave the levels in cubase at 0db. This will give you an accurate reading of what level the converters are seeing. Adding gain after conversion (in cubase) doesn't do you any good. If you are turning down the input faders in cubase because the level is clipping, that doesn't do any good either. By the time the signal gets to the input faders it has already gone through the converters (and clipped them).
