Free software demos- what's the catch?

O.K., I'm overdue to ask another stupid question (why do you think I'm hangin'out in the Newbies section so much?):
How do the free software demo's from n-track, cakewalk, sonic foundry, etc. differ from the real thing? Can a newbie live on demo's alone?
 
usually...the demos let you do everything except save your work...which is pretty important... except the demo for vegas which is fully functional but expires in a week.. i would suggest shelling out the 40 (30?) bucks for n track just to get your feet wet with digital audio...
