Yeah, so we have one laying around not being used... it's an Alesis AudioPro 508. Anyway you can hook this bad boy up and use it to record? Here's some pics (not my pics, but it's the same board...)

I'll rummage through all my step dads stuff tomorrow too, lol... there's ALOT of stuff.

Say I just wanted to record one track, would I just mic the amp and plug a 1/4 to 1/8 cable into the jack and then straight into the line in on my soundcard?

Yep for one track that would do it. If the mixer has direct outs you can use one of those or else come out of the main bus and into your soundcard
