I would like some suggestions for two different applications:

1) Capturing stereo ambience (walla) indoors or outdoors, and

2) Doing foley sound on a soundstage (a.k.a my living room). Is this usually done in stereo?

Any microphone suggestions would be welcome. I already have a shotgun mic for ADR.

For either of these tasks, I would look at a couple of small-diaphragm reference mics; earthworks or similar. For the first application, you're going to want to have a good "zeppelin-style" wind screen device that goes over the mics and protects from wind noise.

I would recommend visiting Trew Audio @ www.trewaudio.com and checking out what they have in stock. You could just give them a call and see what they might recommend; they're pretty cool to deal with, and they're all experts, moreless, at this sort of thing.

A lot of people do, in fact. You'd be surprized.

They're absolutely the worst mics on the planet, though, for handling wind noise, so I'm afraid you'd have to come up with a plan for that.

The Electrovoice 635A is a really popular dynamic mic that's been used for ages for it's ability to withstand the wind. It's not an overly sensitive mic, though, so it might not always fit the bill for really critical applications.
