I have only recently made the switch over to exclusive software sequencing, editing and processing. Therefore, I am still ignorant to many veteran and highly experienced engineering techniques. Specifically, dual computer monitors as seen in many high-end studios. Can anyone explain this purpose and maybe the advantages and disadvantages?

Dual monitors will increase your work flow. It allows you to keep multiple windows open at once avoiding flipping between them. I use maxivista to avoid occupying a pci slot as my pc is not supplied with dual monitor capability.

In protools and other DAW's there is usually an edit window and a mix window. Two screens allows you to view each at once.

That clears up a lot. Do you feel your workload has lightened with the maxivista addition? Are you heavily into plug-ins and virtual instruments?
