They trigger a sample or anything else you want to be triggered.
They are used in electronic drum kits, to trigger a brain so when you hit the pads a drum sample is played. Also in recording triggers can be put on drums, then when you hit them they trigger a sample that you can mix with your mics.
Or you can trigger an entire acoustic drum set up if you wanted.
