how can i describle this...

you play your guitar softly, and it takes away most of the gain...you play it hard the the gain kicks in...


i thought boss had something like this on one of their modeler pedals, but im looking for standalone....

Wow, nice find!

Also, most tube amps have this type of dynamic response inherent in their design. That's one reason why tube amps are so popular with guitar players. With the right gain settings, you can get a similar result: picking softly yields a clean or mild breakup, picking heavily or strumming full chords yields a more distorted sound.
 
Most of the "boutique" overdrive pedals will get you there. I've got a Lovekraft Mojodrive on my pedalboard and it's PERFECT for that very thing. VERY touch-responsive pedal.

Tube amp

It's called a 63 Fender Bassman with a Les Paul. The more attack you play with the more distorted the sound. Play with a lighter attack the sound is cleaner.
 
The boss GT-8 has a function that does exactly that. It can change distortions/amp models with picking sensitivity.
 
I love my Fulltone OCD for this very reason, and I second buying a tube amp, even a cheapie like my blackheart. I like to be able to control the gain with nothing more than my two hands (and maybe a pick).
