Do you use a pick when recording acoustic strumming

I use pick or no pick, strum or finger as the song dictates.

It depends on the role the instrument has to play within the song.

I agree with geck zzed, the song should dictate whatever you do. That being said, I am horrible at fingerpicking, so me personally, I use picks.

For strumming, I prefer a pick, but usually a heavy that plays somewhat softly.
