Can you record 2 mono tracks simultanaeously with an Audiophile 2496?

Hi, I am so busy recording that I am, search for it on Googled out. I use Adobe Audition 2.0 and have the above sound card. I am desiring to return to more mono recordings. I used to record mostly in stereo except with bass, acoustic guitar and some vocals.

I know when I click on the input box, it asks for mono or stereo. Can I arm 2 tracks for recording and set the mono inputs and then pan them like almost hard left and right and accomplish my goal....or do I have to record them in mono, each one at a time. I know there will be a simple reply that answers my inquiry, but when you are in the throes of recording, the basics escape. Thanks for listening, will await your assisting, psongman

oops. P.S. I use an external mixer, yeah, I know Behringer, so I send out and monitor through that medium.
 
Yes, you can do exactly what you are describing, just how you described it.
 
Yup, just pan it on the mixer hard left and right for the inputs you're using. I record guitar and vocals this way, it's a lot easier to keep the flow instead of recording each separately.
