Basic Q: How do i record seperate tracks while listening to the rhythm track

How do i record seperate tracks while listening to the rhythm track ie through my headphones without re-recording it (the rhythm track) onto the new track.

I just want to be able to record a few guitar tracks and not have each new one contain any of the previous tracks (that i may want to listen to as i play the new one).

Im using the shareware version of n-track studio.

I have the SB Live! value sound card in my PC.

i've never owned a multitrack tape recorder, but i figure it's something you could easily do with one of those.

could anybody please help me out here?

i know this has got to be a basic question.
