I've asked this question before on several boards but have yet to get a good answer.

How you do go about getting multiple samples per octave to avoid the 'chipmunk' affect when playing back samples? For example, if I want to sample a keyboard sound and play some chords on the keys without it sounding funny.

Do I need to have such different samples in the recording I'm sampling from to do this? Or do you use timestretch?

yes you do.

much like gigasampler or a sample CD, if you want to sample a live instrument, you've got to take samples for a good portion (if not all) the notes. otherwise, when you pitch shift and stretch you'll start getting distorted sounding notes.
