The descriptions of some mixers and multitrack recorders say they have different numbers of "phono inputs" and "line inputs." For example, one mixer I've read about has 2 phono and 4 line inputs, so what's the difference between phono and line imputs? Also, is it possible to just send the music to the mixer and out to a regular 2-track cassete deck for recording and cut the multitrack recorder out of the process, or do I have to have one to record my music??

Some if the mixers that you are refering to are most likely dj mixers. They provide line level inputs for CD decks and cassette decks. They also provide phono inputs with EIAA eq for magnetic phono turn table cartriges. This is also a low level pre amp section. With out which you can't get a good signal from a record player.
