You can't really... it's like trying to take one of the colors out of blend of different paints after you've mixed them all together.

If the vocal is dead center in the mix and there are no effects applied to it then you can do a reasonabl job of this, but most vocals have some ambience added (reverb, delay) so there's always some left. Plus, it's rare that a voice occupies a range of the frequency spectrum all by itself, so removing it this way also makes the backing tracks sound different.
