I really like CW Guitar Tracks Pro.
No midi (fine by me), and it's laid out as if your recording into a 32 track mixer.
Somewhat limited in some features, but I'm checking out the CoolEdit demo, and despite the features it has, there are some that it doesn't that I'm very used to having.
I also checked out the demo of Sonar, and found that the interface was not very user friendly.
I've never checked out Vegas (maybe this will be the next demo that I download).
I think that there will be a learning curve with any program. It seems that there are very happy users in all camps. Most programs will do much of the same types of things. I think that the key is picking a program and sticking with it.
When I finally decide to make the leap, I'll probably go with Sonar, because of 2 reasons--being a registered Cakewalk user, I can pick up the program for less, and I will be able to import my Cakewalk files that I've amassed over the course of the past few years into Sonar (I'm sure the folks at Cakewalk planned this

).
