2 Connector? 3 Connector? Confused

Hey,

All this makin cable talk has me intrigued. Im confused as to what kinda cable I need. 2 connector? 3 connector?

I want to make RCA, Guitar, and Mic cable. Im gonna get me some Canare stuff, and switchcraft or neutrik connects for each type that I wanna make. I guess I need someone to explain the finer points of just the cable. 2 connector, 3 connector? I dont know much about that.
