I've had my sound card for ages and finally worked out how to record midi-it is simple once ya no how.
My sound card has onboard midi is it easier with a keyboard will the keyboard sustain a note as long as you hold the key down

If the MIDI patch has a sustained note, yes, though they probably have a natural envelope that falls off. Something like a drum hit doesn't sustain much at all no matter how long you hold the key down.

AlChuck is correct. The sound you hear when you hold a note down depends on the sound. For example an accoustic piano patch will begin to die out almost immediately and if you hold it down for 2 minutes, you'll hear nothing at the end. On the other hand, you keyboard should still be tansmitting midi data so you should see a two minute note in your sequencer. If you switch to a patch that will sustain for 2 or more minutes (a pad or non-day string patch or something)... you'll hear it for 2 mionutes.
