I used to have a Boss BR-8, which I think was the original version of what you have. You can definitely listen to other tracks while recording a new one, and I remember this being pretty obvious, you just use the faders on each track.

There are some great points above. I go through this as well. When you have a band, you can mix and match pieces and see if something works with the song as a whole. Being a one-person home recorder as well, I know that it's tough to figure out if something works...it requires more recording...

Sound Forge is a 2 track recorder with lots of effects. Think of this as a tape deck, only on the computer and it doesn't use hissy cassettes. It's great for recording sounds and then cutting them into loop-sized files which can then be used for Fruity Loops or Acid to make the a backing song...
Chessrock once said that using both a condensor and a dynamic works well for acoustic (especially when it is solo acoustic stuff). I find this great, great advice. I use a SM-57 and a Octava MC012 and have pretty good results.
