The new pot would be my first suspect. Since the noise dies down when you touch the pot, I wonder if the pot case is not grounded properly. I'd check the connection from that pot to ground. Is the buzz louder when the volume is down?

Is it a high-pitched note? Check the strings above the nut, and behind the bridge if you have a trapeze-type tailpiece, to see if you're getting sympathetic vibration. Sounds transfer all over the guitar, and they're not always coming from the place they appear to be.

Death core? And EMG's? I'm no pro, but I doubt the wood will make too much of a difference there. Just get something that looks good to you and won't kill your back.
