Back up the cart... so how far are you from the mic typically when you record? If you are too far away, all you are going to get is room sound. Try like 4 inches from the mic.
He could also have his gain staging sideways and maybe he is just bringing up his noise floor a ton?
I love my SM7.
That said, what is it exactly we are recording? Vocals? Guitars? Dish washers? Light brites? That makes a big difference in what you want to get.
In my ever so humble opinion... I sort of hate 414s for drum over heads. So don't feel like you are missing out. My absolute favorite drum OHs are a pair of AT4050s.

Err, whatever happened to matching the proper mic to the proper source? I have both the MSHs and a pair of 4050s... they both get used all the time, sound great... but just have different sources they shine on.

I have three overheads... I use a modified Mixerman set up. AT4050s for the L/R OHs and an SM81 for a center OH. It takes forever to measure this out so that the phase is right and the center is in the center... but I find I get a great image. Then I have a D6 on kick, i5 on rack toms and snare...
I do this sort of thing all the time. I have a rep I use at Sweetwater, he puts the stuff on my credit card, try it out, and send back what I don't want. Just be straight up with your sales guy as to your intentions and you should be fine.
