I am adding some analog components to my current setup. While I'm certain some of it is a taste thing which should I go for: a reel to reel or cassette? I am in the Detroit area and haven't found a big difference price-wise.

hey man...sounds much better! one thing that jumped out was that some guitar sounds jump in at the end that sounded too loud and too panned...those could probably brought down a bit and still bring you the kick you're looking for.
Our last project went through Peerless Mastering in Boston...I'm not sure of their client base but they did a really fantastic job and were affordable.
i think doing just acoustic and vocals is a great way to start because it should help you to get a feel for the mixing process. i would say the most important aspect is to train your ears so they can recognize when frequencies are interfering and then eq to drop those out. as you solo the guitar...
i fall into the same category...i bought some good monitors and can rely on those to give me a good idea of what frequency ranges my mixes are too verbose in. they've also helped me to get vastly improved masters of the mixes.

IMHO (and that's all it is because its not my money we're talking about :)) I like going with the mixer best because the mixer will probably be more useful in the long run. i thought all of the ones you mentioned looked pretty similar. we used a samson in our lab at school and it always got good...
there are volume pedals so that would amp things up and give you a control before feeding the signal in for recording. if you run through a mixing board before going into your audio interface that would have the same effect too.
