Try out a Yamaha AW1600. It's hardware and it does great stuff to "do it all" and burn your CD. The burner is much faster than my older 4416, much faster.
I guess the pros/cons work out for many folks. At least you might listen to one at a vendor's place or from a friend...

As I "mull" it over, I'd suggest you go for 8 tracks. As you mentioned about jamming with your ax, drums, etc., you would mostly use 3 or 4 tracks; however, if you like to fade out a song and then add in any of the many FX kicks, you might add on.
