So just use the SCSI to transfer data to your zip drive for storage purposes and all audio will have to go to your mac for editing and then to a cd or dat.
A zip drive only records data so your question is immaterial, but when you want to transfer digital audio to your mac you should make sure that the sample rates are the same on your 880 as the software you are using, ie; 44.1 kHz or 48.0 kHz. I usually record and transfer at 48.0 kHz for better...

Hopefully the answer could be quick and simple! Did you switch your VCR to 'AUX' channel? Or a channel which is not used by a TV signal? I have been recording stereo dumps to VHS with a JVC, set to AUX channel, and a Sony, set to channel 1. Hope this helps.
