Emu has better dynamic range specs on the A/D and D/A converters than the Saffire. Emu has great quiet, soft-sounding and clear preamps. I have used the Emu but not the Saffire Pro.

jotangent is right. Room treatment is done to remove/reduce bad early reflections and standing waves in the room. Isolation (which you refer to) is another ballgame.

Can't speak for the 137s, but the sm81s sound great on vocals. I would try x/y, then nos or ortf at farther distance and see which works best (if you have a chance to test). In a live setting, omni may give you audience coughing, talking, etc.
