Mixers with decent EQs?
#1 - I'd take a look around for the Speck Electronics 16 channel EQ units, the EQ16 or the SSM 16. I picked one up an EQ16 a few years ago for $300 and I've been happy with it. You can wire it to have two channels of EQ on 8 inputs, or the fully 16 channels on 16 inputs...
The lack of inserts would be be an issue for me.
If you're tracking via external preamps, you could go from Preamp to compressor and then into the line input on the board, allowing you to use the board's A/D interface.. That's not a problem.

I'd bet the CS8 unit requires a PC, like the Mackie unit. Cool tech, that I have come very close to buying more than once...
That MIDI only unit looks cool. Capture, and then playback those MIDI files in the same session... perfection.
Could the display portion just not be connected properly? I'd open it back up and just have a good, slow, look 'round to see if something was crimped, cut, or wiggled loose.

That fidelity of the recording didn't sound like an analog mix to me, so your process makes a lot of sense. Use each tool for what it does best.

I'd love to hear how you tracked and mixed the project.
Was the TSR-8 a 'pass through' on the way to the DAW? Or, did you complete the project all on the analog side and them capture the final mix digitally?
I'm sure there are no directions, but it's pretty easy. You'll see it in there when you pull a fader bank out of the M3700.
It has two small screws that you'll need to undo and then unplug the cables from both ends. Easy to do, just time consuming when you have 32+1+8 of them to do :)
