I'm compiling a list of things I might need to get everything up and running. I'd like to get all the proper cables to hook this thing up to a receiver and or headphones. I also assume i should mic my amps instead of doing direct.
This brings me to the a question. what can I afford to cut corners on and what should I spend extra on?

That really depends on how serious you are about all this. If you're just looking at dipping your toe in the water, there's little point in spending real cash. But if you're more than a "I'm trying this out to see how it works" merchant..........

I want to record all the different ideas for bands I want to start without an embarrassingly low sound quality that would turn potential band members off seconds into listening.

It's definitely worth messing with. It could offer a good introduction to analog multitrack recording. You might move on to reel-to-reel at some point and having used this Yamaha thing before that will give you some valuable experience.
