I'm going to buy a keyboard and I want to use some of the sounds on it to record audio. There 2 I'm looking at right now.

The yamaha psr-e423

Casio CTK-5000

The casio has a line out but the yamaha has a headphone/output jack. If I'm going straight into my interface Line in, is the headphone/output 1/8 jack going to be as good as the line out 1/4 jack for sound quality?

It depends on the implementation of the headphone amp. Strictly speaking, there is no reason that a headphone amp can't be a line output although it might have lower maximum output level (headphones typically need lots of current but not much voltage).

If the line output is balanced, that will be superior to a headphone amp.

Why not go for a better model? The Casio WK200 SHOULD have both line outs and headphone (the WK500 does), it's about the same price and is 76 keys:

I love the sounds from my WK500.

Well, I decided on the yamaha psr-e423. I haven't recieved it yet but I tested a lot of the models in this price range and I determined that Yamaha sounds A MILLION times better than Casio. I also thought the e423 had the best features in the price range.

I'm coming in somewhat late on this, but I've used the 'Headphone' out many a time on various amps and creatures and they record fine. You even get a little extra rawness at times, if required.

@GuitardedMark

Interested in how the E423 works using the headphone jack as line out.
