What is the "normal" range of EQ for the human ear? When I'm mixing separate tracks, should I be cutting out any sound above or below that spectrum?
20-20khz is the commonly quoted range of human hearing. Adults lose the high range pretty drastically, most men probably can't hear much past 16khz. I wouldn't worry about low passing, but on the low end, subsonic frequencies will eat your headroom. Set up a high pass on pretty much everything, and adust the frequency higher until you can hear it start to work, then back it off until you can't.
both .Stupid question? If I'm setting up a high pass filter, should it be on the whole mix or each separate track?
