Evans are good heads - so are Remo.
I use Evans coated vented heads on all my snare batters (although I will use Remo coated Ambasadors if I can't find Evans)
For toms - jazz lends itself to single ply heads (such as Evans G1 or Remo Ambasadors) and while single ply can also work for all styles, many drummers prefer 2 ply (such as Evans G2 or Remo Pinstripes).
I play everything from bebop to hard rock and don't have the time, energy or cash to change out heads for every gig - so I use 2 ply on all my tom batters (single ply on the resonant side) which covers the majority of styles (while I can't get that wide open tom sound needed for jazz, it's a fair trade off).
For recording, I like single ply heads on the tom, which allows for more harmonics/overtones - which I think creates a warmer recorded tone (although single ply can be a little more of a tuning challenge .
I almost always use Evans vented on the snare, and G2's on the toms. I also like the Emad for kick. However, Remo are also used by many, many drummers.
I really like Aquarian heads, but they have poor distribution - so it can be hard to find them in locals shops.
