Which Hard disk - UDMA or SCSI - ideal for audio recording?

SCSI is ideal beacuse of the way it handles requests for data and the way you can chain the drives together, but "ideal" in this case won't get you any extra fidelity over "adequate". Data is data. All you'll get is more expandability and some extra tracks. A fast IDE drive will work just fine.
 
careful with UDMA - I had a Live Value I was doing wav. editing with, and I found that in UDMA mode, I was getting pops on my soundcard. (extra hint - careful of Via 503 motherboards) - After disabling UDMA on the motherboard (back to DMA speeds) - I got no more popping.
