which adapter??

I want to connect my Audio Buddy unbalanced output to the RCA inputs on my Audiophile 2496 soundcard. The only adapter I can find to do this is a 1/4" stereo phone male (which would go into the output of the Audio Buddy) to RCA females. Would this work even though its 1/4" stereo phone instead of TS (unbalanced)? Is there even a difference between the two?

Also, another alternative I found would be to get an XLR single to XLR dual adapter, so that I can use both independent channels on the Audio Buddy for a single mic, and then use a TS single to RCA single on each of the left and right RCA inputs. Would this be a better solution?

Two of these from the outputs of the Audio Buddy to the inputs of the 2496.

There is no need to run the mic to both channels of the Audio Buddy and consequently out to both inputs of the 2496.
Think of the two inputs of the 2496 as two separate mono inputs.
With most recording softwares, you should have the ability to record a mono track that you will then pan to fit the stereo image.
 
Also check out Kristal Audio Engine for a free multitrack recording program.
Acid is a multitrack sequencing program, it only allows for recording one track at a time.
However you can record a stereo track that contains separate mono signals on each channel, then expand that stereo track to two mono tracks.
