the musicians you're recording want to do each song at a time?

when i'm recording it is SOOO much easier to just start off and do ALL of the drums for each song at once, then move on. but some bands want to record drums for a song, then do guitars, then vox, etc. that sucks sooo much to have to re-set everything up and stufff. plus when they INSIST on doing it their way i just have to...

what do you guys do?

Do what the client says. They're paying you after all. You'll end up the winner in the end because they'll be in your studio for twice as long.

The assembly line method has its pros and cons, but it can lead to a homogenized sound, where one track ends up feeling exactly like the others. I can see why they might not want to do it that way, especially if they have a fairly big budget for recording.
 
i like the "assembely line" technique as a musician, however it is more demanding. i feel it tends to add continuity to the recording... on the same token i don't tend to do this with lead instruments and vocals.. perhaps just bass drums and rythym guitar.. in the end you want what is most comfortable for the musicians... maybe try doing projects in three song blocks set the drums for three similar songs then do all over dubs and so on and so forth.
