what do i need to be able to control each individual track on the computer?

An audio interface with at least as many inputs as you have mics - the 1010 is good for this type of thing:

agreed, the Delta 1010 is fantastic. I have two...Use a set of pres for each mic, then run into the 1010 into your computer. Use your software from there...
