Can anyone recommend a good USB mixer under $500? I am recording with a mic and a few instruments. Thank you.

Why are you looking for a mixer? A mixer is used to COMBINE multiple instruments to (fewer) outputs. If you are recording, you want an audio interface. How many separate tracks do you want to be able to record at one time?
