When going from analogue tape to digital do most people use 24bit and dither or is 16bit just as good (or better perhaps). Is going from analogue tape to digital conceptually the same as recording direct to digital or do different rules/theories apply?

Analog Tape to Digital hard drive = analog to digital
microphone to hard drive = analog to digital
guitar DI to hard drive = analog to digital

it's all the same.

If possible, use 24 bit. You don't use dither when recording. Dithering is something you often do when changing from one bit depth to another. e.g. changing a file from 24bit to 16bit.
