straight desktop multitrack recorder software

hey all

As you may know I'm cautiously dipping a toe into this wonderful world of desktop recording, and I wanted to ask, green as I am with all this, about this hypothetical scenario:

I know about the full-featured recording software that does everything from recording to mixing to editing. However, IS THERE a basic recording software that essentially functions as the digital equivalent of, say, an 8 track open-reel, and nothing more?

The context I'm thinking of is using my old analog mixing board (a Tascam M-216) and outboard gear with a computer subbing for an open-reel, and then mix down to something like Sound Forge. Kinda the best of both worlds, you know.

Chances are I'll end up using Cakewalk Home Studio when I finally get my computer built, and never use my Tascam with it, but I'm intrigued with the digital recorder/analog everything else concept. I'm still an inveterate knob-twiddler, see. :-) Any thoughts?
