starting setup for hip-hip/indie/electronic home studio work

self-explanatory! i use ableton and i'm working on music that incorporates live instruments into the midi software i use (video gamey synths, drum machines, etcc etc.) i really only need to record one instrument at a time, and that's usually just acoustic guitar, electric bass and vocals. so yeah, i was wondering what would be a good mic(s)/interface/misc setup for someone hoping to record in this format. as far as price goes, as well as it doesn't cross around $500 dollars, i'm down. i just want a good mid-fi-ish setup so i can have a dependable way to music that sounds dope. let me know what ya think!!

Anytime "MIDI" is mentioned, low latency follows. The above AI is as low as you will go even for $500!

The sound quality is way, way above "mid-fi"! (but to be fair most AIs are) . OK you get two inputs and outputs you say you don't need (now!) but the AI is way under budget so put the extra $$ into monitors, better cans or room treatment.
