Everyone says that the 58 is basically the same mic as the 57 but with a windscreen. My question is, are 58's as protected (from say a drumstick) as the 57's when they have their windscreens off?

No they aren't. Underneath the windscreen, a 58 has plastic on the side, kind of like the 57, but there is no metal grille on the front, just foam.
For use of a windscreenless 58 on drums, unscrew the windscreen, peel out the foam inside (it isn't glued in, and is easily put back, and screw the grille back on. It would still make a pretty big target, but wouldn't get damaged.
